Several years ago I made this recipe for a casual family get together. My niece, Kennady, at the time was a picky eater and would only eat chicken nuggets & french fries. I begged her to try my potatoes, which she did because she loves her Aunt Jayne and to my delight she LOVED them. It is the easiest side dish. Perfect for when you are cooking for a crowd. I took it to a potluck dinner with some friends on Sunday. Once again it got rave reviews. Enjoy!!
Onion Soup Potatoes
2 lbs red bliss potatoes, cut into 1/2 inch cubes
1/3 cup olive oil
1 package onion soup mix
Put potatoes in a casserole dish. Drizzle with the olive oil and onion soup mix. Stir to coat all of the potatoes.
Bake @ 400 for 30 minutes to desired firmness.
